EDA DRINKS & WINE CAMPUS, a pioneer training, research PIONEER and innovation project in Basque Country to promote the drinks and wine industry

EDA Drinks & Wine Campus was born as a unique interdisciplinary project with an international outlook and scope based on a comprehensive perspective that will strengthen the drinks and wine industry through training, research and support for entrepreneurship.

The centre is created by the Basque Culinary Center and is promoted by the Basque Government and Regional Council of Álava, and will be launched in Álava in 2025. EDA will have two headquarters, one in Vitoria-Gasteiz and the other in Rioja Alavesa. The specific locations in both places are currently under discussion.

After more than a decade as an international reference in training, research, innovation and entrepreneurship in gastronomy, the Basque Culinary Center’s aim is to further evolve as an ecosystem for gastronomy. Therefore, with the same exploratory spirit with which it began its journey in 2011, it continues to broaden its 360º vision of gastronomy and advance in its proposal for the future, by creating a new project focused on the world of drinks, that meets the current needs of the industry with an innovative, transversal and transformative approach.

EDA will be a pioneer, knowledge-based centre for a strategic industry in the economy, and an example of public-private cooperation that will foster economic and social development based on excellence, promoting not only the wine-growing area and the wine culture of the Basque Country, but also exploring and developing all aspects of the world of drinks at international level. Beer, kombucha, tea, distilled drinks, non-alcoholik drinks, etc., they will all have a place at EDA.

EDA is open to everyone who wants to create alliances and synergies with prestigious entities, leading companies, wineries, research centres and private partners, with the aim of forming an international collaboration network. EDA will provide a space for coming together and creating new ideas aimed at attracting and developing talent, based on innovation, excellence, knowledge and sustainability.

In short, the mission of EDA Drinks & Wine Campus will be to help transform the drinks industry, becoming an international reference for innovation and contributing a differential aspect to companies and entities involved in the design of business, products and services in line with the principles of quality, sustainability and health, with a local and global focus and generating economic and social development.

COMPREHENSIVE TRAINING

EDA Drinks & Wine Campus’s training programme is based on a 360° vision of gastronomy and interdisciplinary training. Within this learning scenario, students will acquire knowledge on various subjects in a transversal way through an innovative and practical teaching model.

In this context, the training programmes for students, professionals, companies and entrepreneurs have a global, 360º vision of drinks, which will help to create new, versatile and specialised professional profiles who understand the industry from all aspects and who will be able to innovate in different areas and adapt to the consumption, technology and social changes that arise in the industry.

For this, the academic plan must take into account all related academic disciplines (from the laboratory and the sciences, cuisine and the avant-garde, dining service, business, design, tourism and leisure to history, sociology, communications and marketing), and all stakeholders in the value chain (from producing the raw material, processing, distribution and sale, the HoReCa channel and tourism).

Similarly, the study programme will take a transversal look at all drinks, present and future. In addition to wines, the programme will cover other drinks with great potential –beer, alcohol-free drinks, fermented and distilled drinks, etc.– , building bridges and creating synergies, with innovation and sustainability as academic pillars.


INNOVATION AND RESEARCH AS DRIVERS FOR GROWTH

EDA is also contemplating the need to generate knowledge about the world of drinks and to promote the transfer of this knowledge through research and innovation, both for industry professionals and for all stakeholders involved in the value chain and in society.

This leadership in research will provide the wine industry and drinks companies with a major competitive advantage over new countries that are looking to gain a foothold in the market. Sustainability is also key in this industry, and will be one of the strategic research and development pillars for guiding companies in the drinks industry.

EDA will be able to promote the expansion of scientific knowledge about the negative effects of drinks on health and well-being. It will also drive the internationalisation of the sector and improve the position of national drinks in the global market, by fostering intra- and intersectoral cooperation in innovation and marketing actions, to modernise and improve business management, optimise knowledge of marketing and communications material, and increase and support the resilience capacity of companies in the industry through technological innovation tools.

EDA Drinks & Wine Campus se erige como un proyecto único interdisciplinar con una proyección internacional desde una visión integral que reforzará el sector del vino y las bebidas a través de la formación, la investigación, la innovación y el apoyo al emprendimiento.

Se trata de un centro creado por Basque Culinary Center y promovido por Gobierno Vasco y Diputación Foral de Álava, y que se pondrá en marcha en Álava en 2025.  EDA contará con dos sedes, una en Vitoria-Gasteiz y otra en Rioja Alavesa, se está trabajando en la localización concreta de ambos espacios.

Tras más de una década como referente internacional en formación, investigación, innovación y emprendimiento en gastronomía, Basque Culinary Center sigue evolucionando como ecosistema gastronómico y así, con el mismo espíritu explorador con el que comenzó su andadura en 2011, continúa amplificando la visión de 360º de la gastronomía y avanza en su propuesta de futuro poniendo en marcha un nuevo proyecto.

EDA será un centro precursor basado en el conocimiento para un sector estratégico de  la economía, y fomentará el desarrollo económico y social del territorio desde la excelencia impulsando, no solo el área vinícola y la cultura del vino de Euskadi, si no también explorando y desarrollando todas las vertientes del universo “beverage” a nivel internacional. Cervezas, Kombuchas, Tes, bebidas destiladas, bebidas sin alcohol, etc. todo el universo del mundo líquido tendrá cabida en EDA.

EDA es proyecto abierto al mundo, que buscará crear alianzas y sinergias con entidades de prestigio, empresas líderes, bodegas, universidades, centros de investigación y partners privados, con el fin de crear una red de colaboración internacional. Así, generará un espacio de encuentro y creación de nuevas ideas centrado en la atracción y desarrollo de talento, y basado en la innovación, la excelencia, el conocimiento y la sostenibilidad.

En definitiva, la misión de EDA Drinks & Wine Campus será contribuir a la transformación del sector de las bebidas convirtiéndose en referente internacional de innovación y aportando un componente diferencial a empresas y entidades en el diseño de negocios, productos y servicios bajo principios de calidad, sostenibilidad y salud, con un enfoque local y global y generando desarrollo económico y social.

UNA FORMACIÓN INTEGRAL

El plan formativo de EDA Drinks & Wine Campus confluye con la visión 360° de la gastronomía y la formación interdisciplinar. Dentro de este escenario de aprendizaje, los y las estudiantes adquirirán conocimientos en torno a las diversas materias de manera transversal mediante un modelo educativo innovador y práctico.

En este contexto, los programas de formación, dirigidos a estudiantes, profesionales, empresas y emprendedores, integrarán una nueva visión global de 360º de las bebidas, que posibilitará la creación de nuevos perfiles profesionales polivalentes especializados que comprenderán el sector desde todos sus áreas  y serán capaces de innovar en los diferentes ámbitos y adaptarse a los cambios de consumo, tecnológicos y sociales que se vayan produciendo en el sector.

Para ello, el proyecto académico, tendrá en cuenta  todas las disciplinas académicas relacionadas (desde el laboratorio y las ciencias, la cocina y la vanguardia, la sala, los negocios, el diseño, el turismo y el ocio, hasta la historia, la sociología, o la comunicación y el marketing), y también todos los agentes de la cadena de valor (desde la producción de la materia prima, la elaboración, la distribución y comercialización, el canal horeca y el turismo).

Del mismo modo, el plan de estudios ofrecerá una mirada transversal sobre todas las bebidas presentes y futuras.  Tendrá en consideración, además del vino, otras bebidas con gran potencial como son la cerveza, las bebidas no alcohólicas, las fermentadas y las destiladas, entre otras, construyendo así puentes de unión y  sinergias que tomarán la innovación y la sostenibilidad como claves académicas.


LA INNOVACIÓN E INVESTIGACIÓN COMO MOTOR DE CRECIMIENTO

EDA también contempla la necesidad de generar conocimiento aplicado sobre el mundo de las bebidas e impulsar la transferencia de ese conocimiento mediante la investigación y la innovación, tanto a los profesionales del sector como a todos los agentes implicados en la cadena de valor y la sociedad.

Este liderazgo en investigación ofrecerá al sector vitivinícola y empresas de bebidas una gran ventaja competitiva frente a nuevos países que buscan hacerse un hueco en el mercado. Asimismo, la sostenibilidad es una de las claves de este sector, y será uno de los ejes estratégicos de investigación y desarrollo en el acompañamiento al sector de las compañías de bebidas.

Desde EDA se podrá contribuir a la expansión del conocimiento científico sobre las implicaciones de bebidas en la salud y el bienestar. También posibilitará potenciar la internacionalización del sector y mejorar el posicionamiento de bebidas nacionales en el mercado mundial, fomentar la cooperación intra e intersectorial en acciones de innovación y comercialización conjuntas, modernizar y mejorar la gestión empresarial, optimizar el conocimiento en material de marketing y comunicación, e incrementar y apoyar la capacidad de resiliencia de las empresas del sector a través de herramientas de innovación tecnológica.
