‘Utopía’: 100 Basque chefs join forces to open a solidarity restaurant in Bilbao / 100 cocineros y cocineras vascas se unen para abrir un restaurante solidario en Bilbao

Gastronomy professionals in Bizkaia create BISUBI, an organization committed to sustainable, quality and socially committed cuisine.

Profesionales de la gastronomía en Bizkaia crean BISUBI, una organización que apuesta por la Cocina Sostenible, de Calidad y Comprometida con la Sociedad

On June 20, a hundred professionals from the tasty world of gastronomy gathered at Azkuna Zentroa. The cultural center, formerly the Alhóndiga de Vinos in Bilbao, hosted the presentation of BISUBI, a sectorial organization that is committed to quality, social, sustainable and planet-friendly gastronomy.

The new ‘Fundación de Cocineros y Cocineras de Bizkaia – Bizkaiko Sukaldarien Fundazioa’, arises with the mission to put in value the commitment of the collective “with the people and the territory”, since its purpose has a marked social character: “We want to collaborate with the professional development of those people who are encountering difficulties to be able to develop their careers and life projects”, explain its promoters, who do not want to leave anyone behind as a consequence of the different adversities we face as a Society: Pandemic, War Conflicts, Economic and Values Crisis. ..

“We want to recognize and make visible social agents linked to gastronomy who are rowing in the same direction to create a fairer and more sustainable society”, a noble project that is simmering, as they know: “We want our cuisine, in addition to being recognized internationally as an element of cultural identity, to be recognized for our ability to accompany the social, cultural, business and environmental transformation of our land”, explained Olaia Fernández de la Cuadra and Luis Carlos Sanz, representing the team.

RESTAURANT UTOPÍA

The purpose and values of this new entity are to materialize in the creation of a Restaurant: Utopia, a project that will be developed soon in the center of Bilbao, whose main singularity is that there will be no money, since the objective of the initiative is to “provide the opportunity to live a decent dining experience” to all people who come to it, regardless of their socioeconomic level.

A card payment system is being devised, in which donations can be made so that equality and equity can sit at the table to enjoy numerous worthy gastronomic experiences.

El pasado 20 de junio, un centenar de profesionales del sabroso mundo de la gastronomía se reunió en Azkuna Zentroa. El centro cultural antigua Alhóndiga bilbaína de Vinos, acogió la presentación de BISUBI, una organización sectorial que apuesta por una gastronomía de calidad, social, sostenible y respetuosa con el planeta.

La nueva ‘Fundación de Cocineros y Cocineras de Bizkaia – Bizkaiko Sukaldarien Fundazioa’, surge con la misión de poner en valor el compromiso del colectivo “con las personas y el territorio”, pues su propósito tiene un marcado carácter social: “Queremos colaborar con el desarrollo profesional de aquellas personas que se están encontrando con dificultades para poder desarrollar sus carreras y proyectos de vida”, explican sus promotores, que no quieren dejar atrás a nadie como consecuencia de las diferentes adversidades que afrontamos como Sociedad: Pandemia, Conflictos Bélicos, Crisis Económica y de Valores…

“Queremos reconocer y visibilizar agentes sociales vinculados con la gastronomía que estén remando en una misma dirección para crear una sociedad más justa y sostenible”, noble proyecto que se cocina a fuego lento, como bien saben: “Queremos que nuestra cocina, además de ser reconocida internacionalmente como un elemento de identidad cultural, también lo sea por nuestra capacidad de acompañar en la transformación social, cultural, empresarial y medioambiental de nuestra tierra”, explicaron Olaia Fernández de la Cuadra y Luis Carlos Sanz, en representación del equipo.

RESTAURANTE UTOPÍA

Propósito y valores de esta nueva entidad, se quieren a materializar en la creación de un Restaurante: Utopía, un proyecto que se pretende desarrollar próximamente en el centro de Bilbao, cuya principal singularidad es que no existirá el dinero, pues objetivo de la iniciativa es “brindar la oportunidad de vivir una experiencia gastronómica digna” a todas las personas que acudan a él, con independencia de su nivel socioeconómico.

Se está ideando un sistema de pago mediante tarjetas, en las que se podrán realizar donaciones para que la igualdad y equidad se sienten a la Mesa para disfrutar de numerosas experiencias gastronómicas dignas.
